Celebrate Spring and Easter with these simple, delicious treats that were shared on the streets of ancient Rome
and are still enjoyed today!
 


Ingredients for buns:
  • 1 cup warm milk
  • 2 packages (2 tablespoons) dried yeast
  • 1 cup of warm milk
  • 1/2 cup sweetener of your choice (sugar, honey, maple syrup, etc.)
  • 2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cardamon (if you like)
  • 4 eggs
  • 1/3 cup of melted butter
  • 5 or so cups of flour
  • 1 1/2 cup raisins (currants if you have them)
Ingredients for Icing:
  • 1 cup powdered sugar
  • 2 tablespoons milk (or cream)
  • 1 teaspoon vanilla extract

Directions
Pour warm milk into a large bowl.  Sprinkle yeast over top.  Let yeast bubble for 5 minutes.  Stir in sweetener, salt, spices, 4 eggs and melted butter.  Add flour one cup at a time until dough forms a sticky mass.  Scrape dough out of bowl onto a lightly floured board.  Knead for 10 minutes.  
Sing "Hot Cross Buns" whenever you feel tired of kneading.  
Wash out the large bowl and grease it with vegetable oil.  Put dough in bowl and turn to cover it with oil.  Lay a damp dish cloth over top of bowl and place in 100 degree oven for about an hour until it has doubled in size.  Punch down the risen dough.  Knead for a moment and then cut in half.  
Cut each half in half again and again until you have about 20 pieces.  Shape nicely into round buns and place on greased baking sheets.  Let rise in 100 degree oven for a half hour.  Remove buns from oven.  
Preheat oven to 400 degrees.  Bake buns for 12 minutes.  While they are cooling, make the icing.  Place icing in a plastic bag.  Snip off corner of bag and squeeze icing over warm buns.  Make curved lines, crosses, spirals or delicious splatters.
