Ingredients for Buns:
-
1 cup warm organic
milk or soy milk
- 2 packages dried yeast
- 1/2 cup organic sugar, syrup, or honey
- 2 teaspoons salt
- 2 teaspoons organic cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon cardamon
- 4 free-range organic eggs
- 1/3 cup of melted organic butter
- 5 or so cups of organic flour

1 1/2 cup organic raisins or currants

Ingredients for Icing:

1 cup organic powdered sugar
-
2 tablespoons organic milk (or cream)

1 teaspoon organic vanilla extract

Directions
- Pour warm milk into a large bowl. Sprinkle yeast over top. Let yeast bubble for 5 minutes.
- Stir in sweetener, salt, spices, 4 eggs and melted butter.
- Add flour one cup at a time until dough forms a sticky mass.
- Place dough on lightly floured board. Knead for 10 minutes.
- Sing "Hot Cross Buns" whenever you feel tired of kneading.
- Grease large bowl with vegetable oil. Put dough in bowl and turn to cover it with oil.
- Lay a damp cloth over top of bowl and place in 100° oven for an hour until dough is double in size
- Punch down the risen dough. Knead for a moment and then cut in half.
- Cut each half in half again and again until you have about 20 pieces.
- Shape nicely into round buns and place on greased baking sheets.
- Let rise in 100 degree oven for a half hour. Remove buns from oven.
- Preheat oven to 400 degrees. Bake buns for 12 minutes.
While buns are cooling, make the icing. Place icing in a plastic bag. Snip off corner of bag and squeeze icing over warm buns. Make curved lines, crosses, spirals or delicious splatters.
