Ingredients
for 12 muffins

1 cup whole wheat pastry flour

1/2 cup brown rice flour

1/2 cup unbleached white flour

1/4 cup flax seed meal, wheat germ, bran or oatmeal

2 teaspoons baking powder
-
1/4 teaspoon salt
-
1 teaspoon cinnamon
-
1/2 teaspoon cardamom (if you like)

1 cup milk
-
1 cup brown sugar
-
1 egg
-
1 cup frozen blueberries, or any fresh or frozen fruit OR 1/2 cup raisins, currants or other dried fruit

Preheat oven to 350 degrees. Line muffin tins with paper cups.
Sift together dry ingredients. If you only have unbleached white flour, use two cups of that. If you only have whole wheat flour, use two cups of that. The idea is to get 2 cups total of flour total, with at least 1 and 1/2 cups being wheat flours.
Add in a 1/4 cup of additional fiber via flax seed meal, wheat germ, etc. You can combine these ingredients as well for a total of 1/4 cup.
In a separate bowl, mix egg and milk. If you are using Billington's Brown Sugar (recommended), dissolve it into the milk and egg as it sometimes is lumpy.
Pour the wet ingredients into the dry and stir briefly, scraping the sides of the bowl. Stir in 1 cup of frozen blueberries...or 1 cup total of any other fresh or frozen fruite (1/2 cup of dried fruit) Spoon
batter into lined or greased muffin trays. Bake in 350 degree oven for 20 minutes. Let cool and enjoy warm or cold, with butter and jam or just as they are!
